What’s better than pasta? Pasta made into a hearty meal using just ONE pot! I don’t know about you, but, I am not a fan of dishes. So, the fact that this only requires one pan means I’m instantly sold! This kielbasa pasta is sure to be on your menu weekly because it’s easy to clean up, easy to make and so delicious!

Let me preface this by saying that my husband, Jared, does not like pasta! It’s one of his least favorite cuisines. Surprisingly, this pasta dish is one of the very few that Jared likes! This recipe makes dinner a snap. It’s a throw it together kind of meal because it all comes together in just one pot! If you are in a hurry, have a big family, or a hungry husband, this is the perfect recipe for you! 

First, get out all of your ingredients!

Dice your onion and slice your kielbasa sausage into small discs. Add olive oil into your pan and fry the sliced kielbasa and diced onion.Add garlic and cook until fragrant, about 30 seconds.

Add your pasta, can of rotel (don’t drain), chicken broth, heavy whipping cream and seasonings.

 

Bring to boil, then lower heat and simmer for 15 minutes, or until pasta is tender. Remove from heat and stir in cheese. 

Top with sliced scallions and enjoy!


one pot kielbasa pasta ingredients:

  • 1 T olive oil
  • 1 lb smoked kielbasa sausage sliced 1/4 inch thick
  • 1 C diced onion
  • 2 cloves garlic, minced
  • 2 C chicken broth
  • 1 can of mild rotel
  • 8 oz dry pasta
  • 1/2 C heavy cream (or milk)
  • 1/2 tsp salt and pepper, each
  • 1 C shredded cheese
  • 1/3 C thinly sliced scallions

directions:

  1. Add olive oil to a 4-5 quart pan over medium high heat
  2. Fry the smoked kielbasa and onions
  3. Add garlic and cook until fragrant, about 30 seconds
  4. Add pasta, rotel, chicken broth and heavy cream and seasonings
  5. Bring to boil then cover
  6. Simmer for 15 minutes, or until pasta is tender
  7. Remove from heat and stir in cheese
  8. Sprinkle with slice scallions and serve
  9. Do a happy dance because – ONE POT!
