cajun shrimp pasta recipe ⬇️🍤

serves 3. each serving: 465 cals | 42g protein | 46g carbs | 11g fat

1 box (8 oz) @eatbanza penne pasta
1 lb peeled and deveined, raw shrimp
1T cajun seasoning (I used @slapyamama)
1T salted butter
1T minced garlic
1T all purpose flour
1-2T lemon juice (or 1/2T fresh lemon zest)
1 cup nonfat fairlife milk
1/3 cup parmesan cheese

for serving (optional):
fresh parsley
diced roma tomatoes

directions:
cook banza pasta according to the box. drain and set aside.
heat a dash of olive oil in a skillet over medium-high. toss shrimp in the pan and season with the cajun seasoning. cook for 5ish mins until shrimp is fully pink— flipping halfway. move shrimp to one side of the pan and toss in your butter and garlic.
cook for 30 seconds then mix in flour to create your roux. cook for 2 minute (should be light golden brown). add in lemon juice (or zest), your milk, parmesan and salt and pepper to taste. cook for another 3 mins (until sauce is thickened) then add in your cooked pasta. garnish with fresh parsley and roma tomatoes!

spinach, feta and egg whites english muffins

ingredients:
sun dried tomatoes (50 cals worth)
1/2 cup of spinach
9T egg whites
garlic powder (to taste)
salt and pepper (to taste)
100 cal thomas’ light multi grain english muffin
1 light laughing cow cheese
optional: hot sauce

with a mini dash —
throw 1/2 of your spinach, sun dried tomatoes, egg whites and seasonings in a mini dash and close the lid until it’s fully cooked. repeat for other half of the ingredients. spread half of a laughing cow cheese on each half of your English muffin — put in your dash to crisp up and warm the cheese. plate your muffins then egg white patties and top with hot sauce!

OR

with a stovetop:
sauté your spinach and sun dried tomatoes over medium heat until spinach is wilted and set aside. cook up your egg whites (make sure to season with garlic powder and s/p). you can either scramble or do folded egg whites! toast your English muffin and then spread 1/2 of a laughing cow cheese wedge on each side. top with your eggs and sautéed spinach/tomato mixture. top with hot sauce!!

SWEET+SPICY BREAKFAST SANDWICH😋

1 just bare spicy chicken filet
6T egg whites
1 thomas 100 cal english muffin
1 light laughing cow cheese
2T ghughes sugar free sweet chili sauce

air fry the spicy chicken at 360° for 17 mins - the last few mins throw in the english muffin w/the laughing cow cheese spread on it into the air fryer as well to crisp up. cook an egg white patty. combine everything and top with the sweet chili sauce 🤤
